Scottadito di Agnello Grilled lamb chops This month’s piatto del mese is from Sardegna. We are featuring scottadito di agnello, grilled lamb chops, which are fun, easy and very grill friendly. Ingredients; Rack of Lamb (4 each, four bones each—have your butcher ‘french’ or trim the bones clean) Zest of one lemon Thyme Rosemary Garlic Extra virgin olive oil Aged balsamic vinegar (at least 12 years old) 1. Divide each rack into individual lamb chops 2. Season with minced thyme, rosemary, lemon zest and minced garlic 3. Drizzle with olive oil and season with salt and pepper 4. Grill about two minutes on each side (for medium rare) remove from heat and serve 5. Drizzle with a little aged balsamic vinegar (the older the better) Serving Serving size four people Simple contorni (side dishes) will compliment this lamb nicely. We recommend grilled summer zucchini and yellow squash from your garden or a local farm stand. Add a simple salad of arugula, ripe summer tomatoes and shaved parmigiano drizzled with your best olive oil and lemon juice. A sprinkle of sea salt would go great as well. Most people’s familiarity with Sardegnan wines is limited to its savory Vernaccia, which is a great summer wine and aperitivo. However, many people are not as familiar with the island’s interesting reds. Our wine this month is from a wellknown producer called Argiolas. Using predominantly local grape varietals in its wines, Argiolas represents Sardegna as a territory better than any other vineyard on the island. Turriga, one of Argiolas’ signature wines, is our August wine pick of the month. A big red wine blending Cannanau and Carignano (two local island indigenous grapes) as well as Bovale and Malvasia Nera, this is a refined, soft and enchanting wine. On the nose there are notes of caramelized raspberries, blueberries and vanilla. On the finish, there’s an amazing balance between sweet tannins and a savory freshness. This is a big, noble wine. Aged in oak barriques for 24 months, this is a wine that drinks best in 3-4 years. Turriga pairs well with lamb and grilled meats.
