L' impianto e' stato progettato e realizzato in
ottemperanza alle Dir. CEE 73/23. Esso
risulta quindi sicuro. Inoltre l’impianto è
conforme alla direttiva CEE 89/336 sulla
compatibilità elettromagnetica.
Tuttavia indichiamo i seguenti obblighi per l'
utilizzatore:
- Non lasciare l' impianto incustodito
soprattutto in presenza di bambini.
- L' impianto non e' stato progettato per essere
utilizzato all' esterno.
- Accertarsi che il collegamento elettrico sia
dotato di messa a terra oltre che rispondente
alle altre disposizioni e normative relative agli
impianti elettrici di alimentazione.
- Qualsiasi operazione di installazione,
manutenzione e riparazione deve venire
eseguita da un tecnico specializzato e in
assenza di TENSIONE ELETTRICA.
Prima

utilizzare
l’apparecchio
controllarne l’integrità e leggere il presente
manuale.
- Non eseguire nessun lavoro di pulizia
sull’apparecchio con la tensione inserita ed
attendere che le superfici siano raffreddate.

fianco interno del mobile (vedi disegno).

ALLGEMEINE BEMERKUNGEN
The system has been designed and
manufactured in compliance with EU
directives 73/23. It is thus safe to use.
The unit also complies with EU directive
89/336 on electromagnetic compatibility.
However, please note the user has to heed the
following regulations:
- Do not leave the system unattended
especially if children are present.
- The system has not been designed for
outdoor use and must be in any case earthed
(grounded).
L'installation a été projetée et réalisée
conformément aux Directives CEE 73/23 et
donne donc toutes les garanties de sécurité.
L'appareil est Conforme en outre à la
Directive Cee 89/336 sur la compatibilité
électromagnétique.
Toutefois, nous énumérons ci-après les
obligations suivantes pour l'utilisateur:
- Ne pas laisser l'installation sans
surveillance, surtout en présence d'enfants.
- L'installation n'a pas été projetée pour être
utilisée à l'extérieur et doit être dans tous les
cas mise à la masse.
- Vérifier que la connexion électrique soit
non seulement munie de mise à terre mais
qu’elle correspond aussi aux autres
dispositions et réglementations relatives
aux installations électriques de
l’alimentation.
- Toutes les opérations d'installation,
d'entretien et de réparation doivent être
effectuées par un électricien professionel
après avoir suspendu l'alimentation
électrique.
- Avant l’ utilisation de l’ appareil, il faut
côntroler l’integrité et lire ce manuel d’
instructions.
- Ne pas effectuer aucune opération de
nettoyage de l’ appareil si la tension
indiquée sur la plaque signaletique ne
correspond pas au secteur local.
Die Anlage wurde gemäß der Richtlinie
73/23/EWG konzipiert und gebaut und
garantiert daher einen sicheren Betrieb.
Das Gerät entspricht außerdem den
Bestimmungen der Richtlinie 89/336/EWG
über
die
elektromagnetische
Verträglichkeit.
Trotzdem hat der Verwender einige
wichtige Regeln zu befolgen:
- Die Anlage nicht unbeaufsichtigt lassen,
vor allem wenn Kinder in der Nähe sind.
- Die Anlage wurde nicht für die
Benutzung im Freien konzipiert und muß
auf jeden Fall an eine Erdung
angeschlossen werden.
- Die Anlage wurde nicht für die
Benutzung im Außenbereich konzipiert
Überprüfen Sie bitte ob die elektrische
Spannung nicht nur mit Erdung versehen
ist sondern auch ob die weiteren
Bestimmungen und Normen bezüglich
der elektrischen Anlagen befolgt worden
sind.
- Vor jedem Installations-, Wartungs- und
Reparatureingriff muß die Stromzufuhr
unterbrochen werden. Jeder Service muß
durch
technisches
Fachpersonal
ausgeführt werden.
- Vor der Verwendung die Unversehrtheit
des Geräts prüfen und dieses Handbuch
lesen.
- Keine Reinigung ausführen falls die
Netzspannung vorhanden ist. Die
Flächen des Gerätes müssen zuerst
abgekühlt werden.
- Das Gerät nicht verwenden falls die
Netzspannung auf dem Typenschild mit
der
örtlichen
Netzspannung
übereinstimmt.

Darauf sind folgende Daten angegeben:

Bei jeder Anforderung von Reparaturbzw. Wartungseingriffen bitten wir Sie um
Angabe der auf dem Typenschild
aufgeführten Daten.
- Check that the electrical connection includes an
earth wire connection and other electrical
requisites according to regulations.
- Any installation, maintenance or repair jobs
must be carried out with the power off by an
expert technician.
- Before using the appliance, check that it is
undamaged and read this manual.
- Do not do any cleaning on the appliance
while it is live; wait until its surfaces have
cooled down.
- Do not use the appliance at a mains voltage
higher than that on the data plate.
The serial plate is located on the inner side of
the unit (see drawing):

L' apparecchio di ristorazione Mod. BAGNO
MARIA e' concepito per l' esposizione in
ambiente
chiuso
e
la
momentanea
conservazione di alimenti caldi destinati all'
immediato consumo o vendita nei pubblici
esercizi quali: Ristoranti, Alberghi, Trattorie,
Pizzerie, Gastronomie.
NESSUN ALTRO USO E' CONSENTITO.
La NORDCAP/ENOFRIGO S.r.l. e' sollevata
da ogni responsabilita' nel caso che le unita' da
Lei prodotte non venissero utilizzate per gli
usi
previsti.
L' impianto imballato e posto su pallet viene
caricato con l'ausilio di un carrello elevatore e
collocato all'interno dell'automezzo, o vagone
o container, fissato con appositi fermi
meccanici e protetto ai lati da materiale
antiurto.

The BAGNO MARIA buffet is composed
of the following parts:
• A base and free-standing unit made of
solid varnished wood
• An insulated stainless steel inner tank
• A top cover made of glass.
• The heating is provided by elements
attached to the underside of the tank.
• A cook on the bottom of the tank for
draining off the water.
• Wheels on the bottom of the unit
• Separate light swiches for the halogen
lamps.
L’appareil mod. BAIN MARIE est
structuré comme suit:
• Structure du meuble et de la base en
bois massif vernis.
• Cuve intérieure en inox, isolée par un
matérial isolant.
• Calotte supériore en verre.
• Le chauffage est réalisé par une
résistance, il n’est possible q’en
présence d’eau (dans la cuve); le
contrôle du niveau de l’eau coupe
l’alimentation
électrique

résistance.
• Robinet sur le fond de la cuve pour
l’écoulement de l’eau.
• Roulettes A la base du meuble
• Interrupteurs separés pour les lampes
halogènes.
Das Gerätemodell BAIN MARIE besteht

die Stromzufuhr bei unzureichendem
Wasserstand unterbrochen wird.

designed for the display (in a heated
container) and temporary storage of
foodstuffs intended for immediate
consumption or sale in restaurants, hotels,
pubs, pizza houses, delicatessens, and the
like.

The packaged and palletized system is
loaded with a forklift truck and placed in
a truck, railcar or container, secured with
special mechanical clamps and protected
on the sides by shockproof material.
NORDCAP/ENOFRIGO is not liable
for any damage caused by illperformed jobs.
L'installation emballée et mise sur palette
est chargée à l'aide d'un chariot élévateur
et placée à l'intérieur du camion, wagon ou
container, bloquée avec des dispositifs
mécaniques et protégée sur les côtés par
des matériaux antichoc.
Une fois parvenue à destination, elle doit
être déchargée de la même manière, c'està-dire à l'aide d'un chariot élévateur et
posée par terre en prenant toutes les
précautions nécessaires.

attrezzature apposite studiate per tale
esercizio.

Posizionare l' impianto in adeguato sito
rispettando le norme tecnico-sanitarie e,
per quanto riguarda l’alimentazione
elettrica, rispettando le norme del proprio
Paese. Verificare che la tensione e la
frequenza elettrica disponibile sia la stessa
riportata nella targhetta di identificazione.
Verificare
prima
dell’installazione
l’integrità dell’apparecchio. Dopo aver
pulito e posizionato l’apparecchio
collegare il cavo di alimentazione (non in
dotazione), verificare i dati delle
caratteristiche dell’apparecchio ed usare
una presa idonea. E’ necessario avere a
monte un differenziale idoneo (vedere
targhetta identificatrice). E’ obbligatorio
che tali operazioni siano svolte da un
esperto elettricista. Assicurarsi prima
dell’utilizzo, che le ruote siano bloccate
dagli appositi fermi. I materiali impiegati
per l’imballo devono essere smaltiti
secondo le leggi vigenti del Paese di
utilizzo.
L’ apparecchio è provvisto di termostato
da 0 - 90° C per la regolazione della
temperatura dell’acqua all’interno della
vasca.
Prima dell' uso e del collegamento
elettrico pulire tutte le parti con acqua
tiepida e saponi neutri sanificanti, poi
asciugare accuratamente. Non usare in
nessun caso polveri abrasive o detersivi
che potrebbero danneggiare l' impianto sia
internamente
che
esternamente,
specialmente sulle parti in vetro.
Sulla gamba del mobile è installato il
quadro elettrico con i seguenti comandi:
- interruttore generale che inserisce
tensione al quadro;
- interruttori luminosi per l’accensione
delle lampade di illuminazione;
- lampada spia rossa che indica la
resistenza in funzione e si spegne al
raggiungimento della temperatura;
- termostato regolabile da 0°C a 90°C che
determina la temperatura desiderata
dell’acqua.

carried out by skilled personnel using tools
specially designed for these operations.

Carefully unpack the system removing the
main cardboard.
Take off protective packaging materials from
all components of the system and lastly
remove the wooden pallet underneath.
Position the appliance in a suitable site,
respecting the technical and health standards
and the regulations in force in your pwn
country concerning electric power supply.
Check that the electrical voltage and
frequency available are the same as those
indicated on the serial plate.
Before installation, check that the appliance
is undamaged.
After having cleaned the appliance and put it
into position, insert the cable (not supplied
with the cabinet) in the embedded socket.
Verify technical data of the appliance and
choose a suitable plug.
It is
necessary to have a suitable
differential switch upstream (see data
plate). This operation should be carried out
by a skilled electrician.
The packing materials used must be disposed
of in accordance with the laws in force in the
country of use.
Déballer soigneusement l'installation en
enlevant le carton principal.

les composants de l'installation et enlever
la palette en bois.
Positionner l’ appareil dans un endroit
adéquat en observant les règles techniques
et sanitaires et pour ce qui concerne l’
alimentation électrique en respectant les
normes en vigueur dans les pays
Vérifier que la tension et la fréquence
électrique disponible correspondent aux
données figurant sur la plaquette
d'identification.
Avant l’ installation, vérifier l’ intégrité de
l’ appareil.
Aprés avoir nettoyé et mis en place
l’appareil, enfoncer le câble (qui n’est
compris) dans la prise encastrée sur la
base,
contrôler
les
données
des
caractéristiques de l’ appareil et utiliser une
prise adequate. Il est nécéssaire d’ avoir
un différentiel approprié (voir la plaque
d’ identification).
Il est conseillable aussi que cette opération
soit effectuée par un électricien
expérimenté.
Les matériaux employés pour l’ emballage
doivent être mis à la décharge selon les
normes en vigueur dans ce Pays.

Vor Aufstellung die Unversehrtheit des
Geräts kontrollieren.
Nach der Reinigung und Aufstellung des
Geräts, das Kabel (nicht dabei) auf dem
Abgreifpunkt der Grundlage stecken, die
Kenndaten des Geräts prüfen und einen
passenden Stecker anwenden.
Es ist notwendig, ein geeignete
Differential zu haben (siehe die
Identifizierungsschild).
Es wird empfohlen, diesen Arbeitsgang
durch
technisches
Fachpersonal
auszuführen.
Die
Verpackungsteile
sind
nach
diesbezüglich geltenden Vorschriften des
Landes zu beseitigen.
The appliance is fitted with a thermostat
operating at a range of 0° to 90° C for
controlling and adjusting the temperature of
the water in the tank.
Before using the appliance and making the
electrical connection, clean all the parts with
lukewarm water and sanitizing neutral soap,
then dry accurately.
In no case should you use abrasive powders
or detergents which could damage both the
inside and the outside of the appliance.
The electric panel with the following
commands is fitted on the leg of the unit:
- mains switch for supplying voltage to the
panel;
- red switches to light the lamps;
- red warning light indicating that the
heating elements are operating, switched off
when the set temperature is reached;
- thermostat adjustable from 0°C to 90°C
which determines the desired water
temperature.
L’appareil est équipé d’un thermostat de
0–
90°C pour le réglage de la température de
l’eau à l’intérieur de la cuve.
Avant l’utilisation et le connexion
électrique, nettoyer toutes les parties avec
de l’eau tiède et des savons neutres
désinfectants , puis essuyer soigneusement.
Ne pas utiliser en aucun cas des poudres
abrasives ou des détergents qui pourraient
endommager l’ appareil soit à l’intérieur
soit à l’extérieur spécialement dans les
parties en verre.
Le tableau commande avec les suivantes
commandes est installé sur les pieds du
meuble:
- l’ interrupteur général qui branche la
tension sur le tableau;
les voyants rouges indiquant le
branchement des lampes;
- le vojant rouge indiquant les resistances
en fonction, il s’ éteint lorsqu’ on atteint la
température;
- le thermostat réglable de 0°C à 90°C qui
détermine la température de l’ eau désirée.
Das Gerät ist mit Temperaturregler für die
Wassertemperatureinstellung im BainMarie-Becken ausgerüstet; Einstellbereich
von 0°C bis 90°C.
Vor
der
Verwendung
und
dem
Netzanschluß des Geräts, sämtliche
Geräteteile mit warmem Wasser und
mildem Reinigungsmittel abwischen und
dann sorgfältig trockenreiben.
Keinesfalls scheuernde Reinigungspulver
oder -mittel verwenden, da diese das Gerät,
sowohl innen als auch außen - besonders
die Glasteile - beschädigen könnten.
Auf dem Möbelfuß steht die Schalttafel mit
den folgenden Steuerungen:
- den Hauptschalter, der die Spannung der
Schalttafel einschaltet;
- die rote Kontrolleuchten, die die
Lampeneinschaltung zeigen;
- die rote Kontrollampe, um die
Widerstände, die in Betrieb sind, zu
zeigen;
sie
geht
aus
bei
Temperaturerreichung;
- den ab 0°C bis 90°C einstellbaren
Thermostat,
der
die
erwünschte
Wassertemperatur bestimmt.

L’apparecchio BAGNO MARIA è
progettato per funzionare in presenza
d’acqua all’interno della vasca. L’acqua
deve
essere
preferibilmente
demineralizzata, e il suo livello deve
corrispondere al fondo delle vaschette
gastronomiche.
Sui modelli della linea Music, in caso di
mancanza d’acqua, la resistenza si
surriscalda, viene azionato l’allarme e
l’impianto si interrompe. Per spegnere il
segnale di allarme, premere il pulsante
nero che si trova sul quadro elettrico
La vasca deve essere mantenuta pulita, in
particolare
nei
confronti
delle
incrostazioni di calcare.
Gli interventi di riempimento e pulizia
devono essere fatti in assenza di
alimentazione elettrica, e con mobile
freddo.
Per scaricare l’acqua della vasca agire sul
rubinetto per i mod. B.M. Europa e sul
tappo frontale in plastica per i mod. B.M.
Music.
Sui modelli della linea Music –Tango–,
durante il funzionamento normale della
macchina, devono essere tolti i supporti
forati in acciaio inox presenti sopra la
calotta in vetro e la calotta deve essere
totalmente alzata; mentre, finchè
la
macchina è spenta e quindi la temperatura
della cornice della vasca non è calda,
possono essere appoggiati i supporti forati
in acciaio inox sopra la calotta in vetro e
quindi la calotta di conseguenza si
abbassa totalmente.

e,
considerandolo “optional”, raccomanda
di consultare un esperto elettricista per la
scelta e per l’installazione del suddetto
cavo.

The BAIN MARIE unit has been
designed to work with water inside the
tank. The water used should be
preferably demineralized and its level
must correspond to the circular sign
marked on the tank.
In case of water shortage the unit keeps
on working and it is not damaged, but it
cannot warm up the gastronorm pans
properly.
To switch off the alarm signal press the
black push button in the electrical panel.
The tank must be kept clean in particular
from lime deposits.
Technical interventions must be done in
absence of electrical supply and already
cooled unit.
During standard operation of the Music
–Tango– line machines, the perforated
stainless steel supports on the glass
dome have to be removed and the dome
has to be completely raised. However,
while the machine is OFF and the tray
frame is cool, the perforated stainless
steel supports can be stood on the glass
dome, and consequently the dome
lowers completely.
According to the n. 73/23 EEC
directive, NORDCAP/ENOFRIGO srl
doesn’ t provide to power supply cable
and suggests to contact an expert
electrician for the choice and
installation of the cable.
L’appareil BAIN MARIE a été concu
pour travailler avec de l’eau dans la
cuve. L’eau doit être préférablement
demineralisée et son niveau doit
correspondre au signal circulaire signé
sur la cuve.
En cas d’absence d’eau l’appareil
continue à marcher sans problèmes, mais
il ne peut pas rechauffer suffisament les
bacs gastronorm.
Pour èliminer le signal d’alarme on doit
presser le bouton noir qui se trouve sur
le panneau èlectrique.
On doit mantenir la cuve propre surtout
contre les depôts de calcaire.
Les interventions techniques doivent être
faites en absence d’ alimentation
électrique et avec l’appareil déjà froid.
Sur les modèles de la ligne Music –
Tango–, pendant le fonctionnement
habituel de la machine, on doit enlever
les supports forés en acier inoxydable
présents sur la calotte en verre et la
calotte doit être complètement soulevée;
au contraire, tant que la machine est
éteinte et donc la température du cadre de
la cuve n’est pas chaude, on peut appuyer
les supports forés en acier inoxydable sur
la calotte en verre ; par conséquent la
calotte se baisse totalement.
Conformément
aux
directives
europeènnes 73/23 EEC , la société
NORDCAP/ENOFRIGO srl ne fourni
pas le cable d’ alimentation et suggère
la consultation d’ un électricien
expérimenté pour le choix et l’
installation du cable susdit.

Das BAIN MARIE Gerät wurde
entworfen, um mit Wasser in der
Wanne zu funktionieren.
Das
Wasser
soll
am
besten
entmineralisiert sein und sein Niveau
soll dem runden Zeichnen auf der
Wanne entsprechen.
Falls kein Wasser in der Wanne ist,
setzt das Gerät ohne Schaden immer
fort, aber es kann nicht die Gastronorm
Schalen genug erwärmen.
Bei
jedem
einschalten
der
Thermomagnethaupschalter muß man
den schwarz Knopf in der Schalttafel
drücken, um den Alarm abzustellen.
Man muß die Wanne immer reinigen
besoders gegen Kesselstein.
Jeder Service muß bei gezogenem
Netzstecker und bei abgekühltem
Gerät ausführt werden.
An den Modellen der Linie Music –
Tango–
müssen
während
des
Normalbetriebs des Gerätes die
gelochten Edelstahlhalterungen auf der
Glashaube entfernt werden und die
Haube muss ganz gehoben werden,
wogegen
die
gelochten
Edelstahlhalterungen
bei
ausgeschaltetem Gerät, daher mit nicht
heißem Rahmen der Wanne, auf die
Glashaube gelegt werden können, die
folglich ganz gesenkt sein wird.
Nach der Richtlinie 73/23/EWG
werden Kabel und Steckdosen von
dem Hersteller nicht mitgeliefert. Aus
diesem Grund wird es empfholen,
diesen Arbeitsgang durch technisches
Fachpersonal auszuführen.

INCONVENIENTI
Se l’acqua non si riscalda:
- verificare corretto allacciamento
- verificare se inserita la tensione
- verificare la taratura del termostato
Se dopo aver eseguito tali verifiche l’inconveniente
persiste richiedere l’assistenza di un tecnico specializzato.
MANUTENZIONE
Ogni fine giornata, o turno di lavoro, dopo aver disinserito
la fonte di energia ed avere atteso che l’acqua si sia
raffreddata, pulire l’apparecchio con soluzione additiva e
con prodotti disinfettanti neutri.
Verificare sempre che il cavo di alimentazione sia integro
ed eventualmente sostituirlo.
INATTIVITA’
In caso di inattività prolungata dell’apparecchio si deve
procedere nel modo seguente:
- staccare la fonte di energia
- pulire accuratamente l’apparecchio con prodotti
disinfettanti
- proteggere l’apparecchio dall’ossidazione con prodotti
neutri
- coprire onde evitare il deposito di polvere.
DEMOLIZIONE
Alla fine della sua vita, l’apparecchio si deve smaltire
secondo le leggi vigenti del Paese di utilizzo.

If the water do not heat up:
- check that the appliance is correctly connected
- check that the appliance is live
- check the thermostat setting

MAINTENANCE

CONSIDÉRATIONS GÉNÉRALES
INCONVÉNIENTS
Si les eau ne chauffent pas, il faut:
- vérifier si la connexion est correcte
- vérifier si la tension est branchèe
- vérifier le calibrage du thermostat
Si après avoir effectué ces contrôles l’inconvénient persiste,
il faut requérir l’assistence d’un technicien spécialisé.
ENTRETIEN
A la fin de chaque journée ou d’un travail par roulement,
après avoir coupé la source d’énergie et attendu que la eau se
soit refroidie, nettoyer l’appareil en utilisant une solution
additive et des produits neutres désinfectants.
Vérifier toujours que le câble de l’alimentation soit intact et
éventuellement le remplacer.
INACTIVITÉ
Pedant des périodes d’inactivité prolongée de l’appareil, il
faut procéder dans la façon suivante:
