Chardonnay
Quality has risen dramatically over the last few years, so much so, that many now consider this category a great rival for the French
Burgundies. Gone are the heavy, overly oaked, course wines of the past. These days the wines have more finesse elegance and
balance. They are round, generous and mouth-filling but with complexity and length. There is also much diversity between the
appellations. Many of the wines have a cult following. California Chardonnay has truly come of age.

Sauvignon Blanc has at last found its niche. These are wines that have much less power and body than Chardonnay but
have more vibrancy and zing. The great debate today is whether or not the wines benefit from any oak contact.
Those winemakers that do like the use of oak do so sparingly, generally 1-3 months at most. The key they feel, is to try
to tame the grassiness and green apple flavours whilst bringing out the pear, fig and citrus nuances and still retain the
refreshing acidity. This is now a popular category for those seeking other than Chardonnay.
