One kilometer north of Laem Sing Beach is the famous Surin Beach. This quiet bay is characterized by massive trees
of Casuarina under which to enjoy some fresh and well-deserved break. The central part of the beach is occupied by
a dozen mini-restaurants where you can enjoy Thai excellent fish and fresh coconut. Surin's Village is the traditional
heart of the Muslim community of Phuket, on the road you will see indeed Ban Thao mosque, the largest Island structure. Visitors are welcome, even if the day is not recommended on Friday, a holy day for the community precisely.
The village hosts many street markets offering Muslim food and fresh fruit collected from orchards nearby. At the traffic light may proceed straight to the “monument to the heroes”, follow the main road to Phuket Town, or turn left on

Un chilometro a nord di Laem Sing Beach si trova la famosa spiaggia di Surin. Questa tranquilla baia è caratterizzata
dalla presenza di imponenti alberi di Casuarina, sotto cui godersi un po’ di fresco e una meritata sosta. La parte centrale della spiaggia è occupata da una dozzina di piccoli ristoranti Thai dove gustare dell’ottimo pesce e del cocco fresco. Il villaggio di Surin è il cuore tradizionale della comunità musulmana di Phuket, lungo la strada potrete infatti

QUESTA È UNA VERA SFIDA
Ureshino è un paese noto per rappresentare la più salda tradizione culinria
Giapponese. Per Guido è una vera soddisfazione introdurre con successo la cucina
Italiana in una realtà così chiusa e conservatrice. Dopo sei anni, grazie al proprio
bagaglio di esperienze, decide di spostarsi a Tokyo, nel ristorante Tre Corone a Ginza,
il cuore della città, per conto della Cojun Soji Company. In quattro anni di appassionato lavoro, il Tre Corone diventa uno dei ristoranti Italiani più conosciuti di Tokyo,
pregiandosi del “Piatto d'Argento della Accademia di Cucina Italiana”, e dell'ambita
insegna “Euro Toques”. Con Gabiele Ferron e Girolamo Panzetta, Guido realizza in
giappone un programma televisivo di 10 puntate in cui mostra gli angoli nascosti della
sua regione, il Veneto, esaltandone la tradizione culinaria, e le radici italiane.
Dal 2005, lo Chef ritorna in patria lavorando per Alpitour, nel Grand Hotel Capo Boi,
in Sardegna, fino al 2006, anno del trasferimento in Thailandia.

La mia carriera di cuoco nasce a Londra, terminato il diploma decisi di partire per fare nuove esperienze e migliorare il mio inglese,
sapevo sarebbe stato fondamentale per il futuro. Nel 1997, neodiplomato senza uno straccio di esperienza nel settore della
ristorazione, iniziai a cercare lavoro. La prima esperienza fu
come aiuto cameriere in una catena di ristoranti turchi di
alto livello, portavo vassoi e piatti ai camerieri, spesso
stavo in cucina ad asciugare bicchieri e posate. Iniziai ad
osservare gli Chef che cucinavano e preparavano i piatti con maestria, precisione e arte. Tutto ciò mi attirava molto, continuai così ad interessarmi sempre di

tre mesi imparai i metodi di preparazione ed il successivo impiattamento, osservando e chiedendo, in particolare allo Chef che mi aveva preso in simpatia, con grande
piacere e disponibilità spiegava tutte le procedure. Decisi così, di chiedere il trasferimento in cucina come un vero cuoco, e grazie alla buona considerazione che aveva
la direzione nei miei confronti, la mia proposta venne accettata.
Dopo un anno passai a lavorare in uno degli Hotel più rinomati di Londra, il
“Grosvenor House” in Park Lane, nel ristorante Italiano “La Terrazza”. Questa fu realmente la mia prima scuola di cucina Italiana, la più difficile e dura che abbia mai
affrontato. Grazie allo Chef Adriano Cavagnini, che in quegli anni mi insegnò tanto
anche dal punto di vista personale, imparai ad essere determinato a credere sempre
di più nelle mie capacità. Fu decisamente un’esperienza intensa che rese tutto il resto
semplice rispetto alle esperienze successive considerata la mia abitudine ad una

L’inizio fu un po’ traumatico ma allo stesso tempo travolgente. Il primo giorno di servizio lo Chef disse: “Hai 2 ore prima del servizio, chiedimi tutto quello che non sai,
perchè stasera sarai da solo agli antipasti”. Tutto andò per il meglio, fortunatamente
quel giorno al ristorante non venne molta gente. Il secondo giorno, accadde la stessa cosa, lo Chef mi mise ai secondi piatti, dicendomi: “Chiedimi quello che non sai
perchè stasera sarai solo ai secondi”. Di fronte alla scelta “nuota o affoga” per fortuna riuscii a nuotare.
