We specialise in Italian wine and pay extra attention to the south of Italy, due to its compatibility with our food - our extensive Sardinian selection being the highlight. We have a diverse range of local wine too, largely from our own state of New South Wales, as we love to showcase local produce. We continue to offer a range of Sardinian wine imported exclusively for us - these are marked with an asterisk (*) throughout the list. This programme is made possible through our ongoing partnership with importers Enoteca Sileno, Trembath and Taylor, Godot Group and Negociants, and we thank them for their continued support. In 2012, we are proud to introduce a selection of rare and aged wine from the cellar of a private collector - these wines have been aged in a natural underground cellar and are in the very best condition possible. For a quicker selection, you can turn to the Sardinian or New South Wales sections, complete with maps and information on the history and varietals of each region. In the main list, Italian and Australian wines are listed together, by varietal, to assist in navigating through the list more easily. We have a large range of wine by the glass, as well as small and large bottles. If you require guidance, a member of our wine team will be happy to assist. Buona Avventura! Although it may all seem a little new-age to some, it is worth noting that many of the best wines in the world from some of the most prestigious estates are made using these methods. Organic wines are produced from grapes grown without the use of chemical fertilizers, pesticides, fungicides and herbicides. Biodynamic methods were developed by Austrian philosopher Rudolf Steiner and wines are made using a wholistic and sustainable approach. Grapes are grown using the same core principle as organics, with the addition of special preparations added to the soil, which improves soil structure, nutrient and mineral levels, as well as plant growth and development. Recycling of farm and wine residues back into the vineyards improves overall sustainability of the land. Natural wines are more difficult to define, as there is no governing body set up to control production methods, resulting in various interpretations. They are generally made with ‘minimal intervention’, using natural yeasts, and minimal or no sulphur is added. Wine is often left on skins (both white and red) and there is no filtration, fining or adjusting. Natural wines look and taste a little different to ‘conventional’ wines, they will be darker in colour and cloudy, and will evolve dramatically in your glass. They are full of life, vibrant and interesting though, so whilst not for everyone, they are worth trying for those who are looking for something a little different. 3 Sanpellegrino Sanbitter Red non alcoholic aperitif Cinzano Bianco or Rosso - It is a unique region that has spent much of its history under Spanish rule - the Spanish influence remains in Sardinia’s food, culture and wine. The Phoenicians were Sardinia’s first foreign invaders and introduced winemaking to the island, but it was the Spanish, controlling th th the island from the 14 to 18 centuries, who contributed the most to Sardinia’s wine production. The climate is Mediterranean, with short, mild, wet winters and long, hot, dry summers. Characterised by rugged mountains and dry plains, soil types vary from sandy clays in the south, the granite of Gallura in the north, to alluvial, gravelly soils around Oristano in the west. Today Sardinia is home to a unique range of grape varieties, predominantly of Spanish origin. Previously known for producing bulk, fortified and ‘Meditazione’ wines (including the famous Vernaccia di Oristano from the west coast), Sardinia is now famous for its high quality table wine from Vermentino, Cannonau and Carignano. Beyond these, lay an exciting range of lesser known varieties such as Nuragus, Torbato, Monica and Bovale, adding diversity and interest to our Sardinian range. 10 Spumante e Frizzanti Sparkling wines are produced from a variety of local and international grapes in Sardinia (if only in fairly small quantities) and can be dry or sweet. Mesa and Tenute Olbios both make a sparkling wine in the ‘Metodo Classico’ (Champagne method) with Sella e Mosca and Cantina del Vermentino using the Charmat (Tank) method. Thought to be a sub-variety of Malvasia, it is grown widely throughout Sardinia. Flavour characteristics include citrus, melon, fennel, peach, herb and honey, with floral notes and lemony acidity. The best examples are found in the granite soils of Gallura in the islands north-east, with Vermentino di Gallura being Sardinia’s only DOCG. Also found in Liguria and Tuscany, Vermentino can be consumed with a variety of seafood and white meat dishes, according to weight and style. 2010 2011 2010 2010 2010 2010 2010 2010 2010 2010 2009 2010 2010 2010 2009 2009 2008 2006 2005 2004 2006 2006 Sella e Mosca ‘Monteoro’ - Vermentino di Gallura Superiore DOCG* Tani ‘Taerra’ - Vermentino di Gallura DOCG Pala ‘I Fiori’ - Vermentino di Sardegna DOC Santadi ‘Villa Solais’ - Vermentino di Sardegna DOC Vermentino-Nuragus Dolianova ‘Prendas’ - Vermentino di Sardegna DOC* Mesa ‘Primo Bianco’ - Vermentino di Sardegna DOC* Mesa ‘Giunco Piccolo’ - Vermentino di Sardegna DOC* 500ML Pala ‘Stellato’ - Vermentino di Sardegna DOC Contini ‘Tyrsos’ - Vermentino di Sardegna DOC Tenute Olbios ‘Lupus in Fabula’ - Vermentino di Sardegna DOC* ORGANIC Feudi della Medusa ‘Albithia’ - Vermentino di Sardegna DOC Sella e Mosca ‘I Piani’ - Isola dei Nuraghi IGT* Vermentino-Torbato-Sauvignon Capichera ‘Lintori’ - Isola dei Nuraghi IGT Dolianova ‘Montesicci’ - Isola dei Nuraghi IGT* Vermentino-Malvasia-Nasco Mesa ‘Opale Dopo’ - Isola dei Nuraghi IGT* Capichera ‘Classico’ - Isola dei Nuraghi IGT Pala ‘Entemari’ - Isola dei Nuraghi IGT* Vermentino-Chardonnay-Malvasia Capichera ‘Santigaini’ - Isola dei Nuraghi IGT UNFILTERED Capichera ‘Santigaini’ - Isola dei Nuraghi IGT UNFILTERED Capichera ‘Santigaini’ - Isola dei Nuraghi IGT UNFILTERED Capichera ‘Vendemmia Tardiva’ - Isola dei Nuraghi IGT Dettori ‘Bianco’ - Romangia IGT NATURAL Olbia, Olbia Monti, Olbia Serdiana, Cagliari Santadi, Carbonia Dolianova, Cagliari Sant Anna, Carbonia Sant Anna, Carbonia Serdiana, Cagliari Cabras, Oristano Olbia, Olbia Pula, Cagliari Alghero, Sassari Arzachena, Olbia Dolianova, Cagliari Sant Anna, Carbonia Arzachena, Olbia Serdiana, Cagliari Arzachena, Olbia Arzachena, Olbia Arzachena, Olbia Arzachena, Olbia Sennori, Sassari 80 88 50 56 60 65 68 74 75 96 88 59 90 75 115 165 105 350 360 370 200 135 Nuragus Nuragus is Sardinia’s most planted varietal and is found mostly in Campidano and Cagliari. Vernaccia di Oristano is unique to Sardinia and unrelated to Italy’s other Vernaccia’s - it may be indigenous, or was introduced by the Phoenecians. Found predominantly in the areas surrounding Oristano, grapes are planted in limestone soils. Vernaccia di Oristano is a historical wine, usually dry, made from over-ripe grapes in a similar style to Spanish Sherry. Wines are aged in a system similar to Sherry’s ‘solera’ where the wines will develop ‘flor’- it is differentiated mainly by the fact that Vernaccia di Oristano is rarely fortified. These are complex wines, with deep colour and flavours of orange rind, dried apricot, roast hazelnut, tobacco, tea and winter honey. Granazza is the local name for the same grape around the area of Nuoro in the centre of the island. These wines are consumed typically as an aperitif or as a ‘meditazione’ wine, at the end of the meal. Contini ‘Karmis’ is made in a dry table wine style and is great with rich fish and white meat dishes. 1988 Contini - Vernaccia di Oristano Riserva DOC 500ML NV Contini ‘Antico Gregori’ - Vernaccia di Oristano DOC 375ML 2011 Contini ‘Karmis’ - Bianco Tharros IGT 2009 Sedilesu ‘Perda Pinta’ - Barbagia IGT Off-Dry 2008 Sedilesu ‘Perda Pinta - Sulle Bucce’ - Barbagia IGT ORGANIC-UNFILTERED ORGANIC-UNFILTERED Cabras, Oristano Cabras, Oristano Cabras, Oristano Mamoiada, Nuoro Mamoiada, Nuoro 125 220 90 98 110 Malvasia Malvasia is of Greek origin (from the Peloponnese) and is thought to have been brought to Sardinia in the Byzantine era. Grown mostly in Campidano and Bosa, it is usually made as a sweet wine, due to high natural sugar levels. Wines are rich and spicy, with hazelnut, apricot and musk flavours. Dry versions are also made (as with the example here) and are best with rich seafood, spicy dishes and white meats. Porcu is considerd to be the top producer of this unique Sardinian style. 2007 Porcu - Malvasia di Bosa DOC* NATURAL Modolo, Oristano 130 Cannonau / Grenache Cannonau is known as Grenache in France and Garnacha in Spain (where the Sardinian clone originated) and is Sardinia’s most important red grape. Cannonau is grown all over the island, with the best examples coming from the area around Nuoro in central Sardinia. With a passion for supporting local businesses, we have compiled a list of exceptional wines from our own state - an often overlooked region in Australian wine. New South Wales is Australia’s second largest wine producing state, home to around 450 wineries and makes about one third of the country’s wine. With a diverse climate ranging from very hot (Riverina) to incredibly cool (Tumbarumba), the state produces a diverse range of grape varietals and wine styles. New South Wales can also lay claim to two iconic Australian wine styles - aged Hunter Valley Semillon and Riverina botrytis Semillon. Sparkling Southern Highlands is relatively new on the wine scene, and still very over-looked by many. This cool climate region produces wonderful aromatic whites and great Chardonnay and Pinot Noir - the two main grapes used for sparkling wine.
