The Pilu at Freshwater wine list aims to provide a sensory journey to complete your dining experience. Highlighting the
diversity and quality of Italy and Australia’s offerings, you’ll find the esoteric showcased alongside the classic. The regions
of southern Italy, particularly Sardinia, are the focus as these wine styles complement the cuisine of Sardinian chef and
restaurant owner, Giovanni Pilu. This year we have introduced a focus closer to home, with special attention on our own
state of New South Wales. We are working with a broad range of local wineries and winemakers to uncover gems in our
own exciting and diverse regions. For a quicker selection process, you can turn straight to the Sardinian and New South
Wales sections (pages 8 and 13 respectively). In the main list Italian and Australian wines are listed together, using
varietal headings, in order of palate weight. If you require guidance, a member of our wine team will be happy to assist.

Organic, Biodynamic and Natural wines
As increasingly popular as they are controversial, organic, biodynamic and natural wines are now an important part of our wine
culture - so we feel the need to offer a little information for those who may be new to, or curious about, them. Although it may all
seem a little new-age to some, it is worth noting that many of the best wines in the world from some of the most prestigious
estates are made using some, or all of these methods.
Organic wines are produced from grapes grown without the use of chemical fertilizers, pesticides, fungicides and herbicides.
Biodynamic wines are made with a more wholistic and sustainable approach. Grapes are grown using the same core principle as
organics, with the addition of special preparations added to the soil. This aims to improve soil structure, nutrient and mineral
levels, as well as plant growth and development. Recycling of farm and wine residues back into the vineyards improves overall
sustainability of the land - we have Austrian philosopher Rudolf Steiner to thank for developing these alternative methods.
Natural wines are more difficult to define, as there is no governing body set up to control production methods resulting in various
interpretations. They are generally made using ‘minimal intervention’, natural yeasts are used, with minimal or no sulphur added,
wine is usually left on skins and there is no filtration, fining or adjusting. Natural wines look and taste a little different to
‘conventional’ wines, they will often be darker in colour and cloudy, with some sediment, and they will evolve dramatically in your
glass. They are full of life, vibrant and interesting though, so whilst not for everyone, they are worth trying for those who are
looking for something a little different.

Sardinia, the second largest island in the Mediterranean, is found 200 kilometres off Italy’s west coast. It is a unique region that
has spent much of its history under Spanish rule – the Spanish influence remains obvious in Sardinia’s food, culture and wine. The
Phoenicians were Sardinia’s first foreign invaders and introduced winemaking to the island, but it was the Spanish, controlling
Sardinia from the 14th to 18th centuries, who contributed most to the future of its wine production. Sardinia’s climate is
Mediterranean, with short, mild, wet winters and long, hot, dry summers. Characterized by rugged mountains and dry plains, soil
types vary from sandy clays in the south, the granite of Gallura in the north, to alluvial, gravelly soils around Oristano in the west.
Today Sardinia is home to a unique range of grape varieties, predominantly of Spanish origin. Previously known for producing
bulk, fortified and ‘Meditazione’ wines, Sardinia is now famous for its high quality table wine from Vermentino, Cannonau and
Carignano. Beyond these, an exciting range of more unusual varieties adds diversity and interest to the Sardinian range.

Vernaccia di Oristano
Vernaccia di Oristano is unique to Sardinia and unrelated to Italy’s other Vernaccia’s - it may be indigenous, or was introduced by
the Phoenecians. Grapes are planted in limestone soils of the Tirso basin and produced from over ripe grapes. Usually a dry wine,
made in a similar fashion to sherry, aged in a system that is similar to Sherry’s ‘solera’ where the wines will develop ‘flor’differentiated only by the fact that Vernaccia di Oristano is rarely fortified. These are complex wines, with deep colour and
flavours of orange rind, dried apricot, roast hazelnut, tobacco, tea and winter honey. Consumed typically as an aperitif or as a
‘meditazione’ wine, at the end of the meal.

Sparkling wines are produced from a variety of local grapes in Sardinia, if only in fairly small quantities. Wines tend to be light and
fruity and can be dry or sweet. Mesa, one of Sardinia’s most progressive producers, make this ‘Metodo Classico’ (Champagne
method) wine from a blend of Vermentino and Chardonnay, the wine has been fermented in bottle and has citrus, honey and
brioche flavours with a dry finish.

Sardinia’s most important white varietal arrived on the island in the late 19 century via Corsica. Thought to be a sub-variety of
Malvasia, it is grown widely all through Sardinia. Flavour characteristics include citrus, floral, melon, fennel, peach, herb and
honey, with lemony acidity. Its greatest expression is found in the granite soils of Gallura in the islands north-east, with
Vermentino di Gallura being the islands only DOCG wine. Also found in Liguria and Tuscany, Vermentino can be consumed with a
variety of seafood and white meat dishes, according to its weight and style.

Nuragus
Nuragus is Sardinia’s most planted varietal and is found mostly in Campidano and Cagliari. Possibly of Phoenecian origin, it is a
popular local style, with its floral aromas, medium bodied palate weight, juicy green apple flavours and lively acidity. Can be
consumed with bottarga, shellfish and fried seafood.

Nasco
Nasco is an ancient Sardinian varietal, its name is derived from the Sardinian ‘nuscu’, meaning musk. Nasco is grown only in the
southern half of the island, and is usually made into sweet wine. It makes a robust and fruity dry wine, with musk, banana and
pineapple flavours. Dry versions can be consumed with rich fish and white meat dishes.

Vernaccia di Oristano
The name Vernaccia is derived from the Latin Vernaculus, which defines all that comes from a given place. Traditionally made into
the more famous ‘sherry’ style, here we see it as a dry table wine. ‘Karmis’ is a rich, perfumed white wine, with apricot and stone
fruit characters. Consume with fish and white meat.

Malvasia
Malvasia is of Greek origin, from the Peloponnese and is thought to have been brought to Sardinia in the Byzantine era. Grown
mostly in Campidano and Bosa, it is usually made as a sweet wine, due to high natural sugar levels. Wines are rich and spicy, with
hazelnut, apricot and musk flavours. Dry versions are also made, and are best with rich seafood, spicy dishes and white meats.
Porcu is considerd to be the top producer of this unique Sardinian style.

Almost every winery in Sardinia produces a rose wine. Predominately made from Cannonou and Carignano in a dry style, these

Light red varietal, possibly related to Bovale that is grown mainly around Sassari in the north-west. It produces a wine with earthy
and gamey flavours, and drinks well with meat terrines and game dishes.

Otherwise known as Grenache, Sardinia’s most planted red varietal was probably brought to the island by the Spaniards in the 15
century. Usually made as a medium to full-bodied style, the best examples come from the area around Nuoro. Cannonau has juicy,
sweet raspberry and blackberry fruit, with hints of chocolate, warm spice and earth characters. It has soft, fine tannins and can
reach quite high levels of alcohol. It is a great match for suckling pig. Styles here range from medium bodied and soft to rich,
supple and powerful.

Monica is one of Sardinia’s oldest varietals; possibly brought to the island by Spanish monks in the 11 century. It is grown in the
southern half of Sardinia, mainly on the Campidano Plain, where it produces a medium bodied style with firm acid and plum, black

Sangiovese
Italy’s most widely grown red varietal is used in the great wines of Tuscany; including Chianti Classico, Brunello Di Montalcino
and Vino Nobile di Montepulciano. Many clones exist and in Sardinia it is grown mainly in the central west of the island and
produces a robust, savoury style of wine that goes well with wild boar and meaty pastas.

The great red varietal of Bordeaux’s right bank is found in small quantities throughout the island. Antonella Leda d’Ittiri from
Sassari in the north-west, produce two excellent Merlot based wines, they are rustic styles with plummy fruit, earthy tannins and

Bovale/Nieddera are related to the French Mourvedre and Spanish Monastrell. In Sardinia there are two distinct clones; Bovale
Sardo (regarded as the superior clone), and Bovale Grande (or Nieddera), which is widely planted around Oristano. Bovale
produces a medium to full bodied style, with earthy, spice, vegetal and dried herb flavours. Drinks well with lamb, goat and pasta
with meat based sauces.

Carignano

Carignano is known as Carignan in France and Carinena in Spain, and probably arrived in Sardinia from Spain during the 14
century. Planted in the sandy clays of the Sulcis region in the south-western corner of the island, wines produced are deep garnet
in colour, making powerful and structured red wine with savoury dark berry fruit and earthy flavours. The wines are rich in tannin,
acidity, colour and palate weight; and are best with slow roasted lamb and goat.

ventilated barns - this method is known as ‘apassimento’. Sardinia is no exception and with its hot climate, many intense styles are

The growing trend over recent years to consume local produce has been a positive development and is a philosophy Pilu at
Freshwater follows. While our kitchen is Italian in style, we source many ingredients from local New South Wales farmers and
believe firmly in supporting local businesses. This approach now extends to our wine list, with a focus on exceptional wines from
New South Wales. At the same time Sydney wine drinkers, never as parochial with their wine selection as other Australian cities,
are starting to take more notice of local wines. This shift can also be attributed to the increasing range and quality of wines being
produced in wineries across the state. NSW is Australia’s second largest wine producing state, home to around 450 wineries,
making about one third of the country’s wine. With a diverse climate ranging from very hot (Riverina) to incredibly cool
(Tumbarumba), the state produces a diverse range of grapes varietals and wine styles. NSW can also lay claim to two iconic
Australian wine styles – aged Hunter Valley Semillon and Riverina Botrytis Semillon.
Sparkling
Southern Highlands is relatively new on the wine scene, and still very over-looked by many. The cool climate region produces
wonderful aromatic whites and great Chardonnay and Pinot Noir – the two main grapes used for sparkling wine. Centennial
vineyards is setting the bar very high and produces a large range of high quality wines, including five excellent sparkling wines
made in the traditional Champagne method.

Sauvignon Blanc
Sauvignon Blanc hails from the Loire Valley in France, where it makes the well-known Sancerre and Pouilly Fume wine styles.
Vines were first planted in Orange in 1980 and the region has since established itself as one of Australia’s best Sauvignon Blanc
producers, with Southern Highlands now joining the ranks. You can expect lean, aromatic styles with gooseberry, citrus and crisp
acidity.

Semillon
The Hunter Valley, two hours north of Sydney, was established in the 1820’s, making it Australia’s oldest and most well known
region. With a hot climate, great wines are produced from Shiraz and Chardonnay, but it is the aged Semillon that is Australia’s
most unique wine style. Lean and crisp when young, the wines develop lemon, butter and toast characters with age. Semillon is
also successfully grown in Mudgee.

Marsanne + Viognier
Originating in the northern Rhone Valley in France, where they make rich, aromatic whites. Viognier has become a speciality of
the Canberra District region, either on its own, or blended with Shiraz in emulation of the great red wines of northern Rhone. It is
a very perfumed grape, with intense apricot and stone fruit characters and a viscous palate. Marsanne is not as well known, but
produces medium styles with honeysuckle and almond characters.

Native to France, producing the great white wines of Burgundy, Chardonnay was first planted in Camden in 1833. Widely grown in
all regions of NSW, the best versions are from the Hunter Valley and Canberra District. As Orange is one of Australia’s highest
regions it produces beautiful, elegant styles; Canobolas Smith make a benchmark, Burgundian style from biodynamic vineyards, as

Corvina-Rondinella Blends
Corvina and Rondinella are found in the Veneto region in north-east Italy, where they are used to produce the famous wines of
Valpolicella and Amarone - they are grown in small quantities in NSW. The Hilltops region is home to vines planted in the early
1860’s. The cool climate is particularly suited to Cabernet Sauvignon andalso favours the Veneto’s famous red grapes. Brian

Shiraz (Syrah, as it known in France) is the most well known red Rhone variety, widely grown in all NSW regions. The Hunter
Valley is best known for its characteristic ‘earth and leather’ styles. Cooler climate regions produce a more European style of
Shiraz, with white pepper and savoury notes. Canberra is one of the states top producers of premium wine and now has a

The town of Franciacorta is in the heart of Lombardy, in northern Italy, and gives its name to Italy’s most important ‘Metodo Classico’
(Champagne method) sparkling wine. Made in the same way as the great wines of Champagne in France, where the second fermentation
takes place in the bottle. Wines are made from a blend of Chardonnay, Pinot Noir and Pinot Bianco. To achieve DOCG status, wines
must have a minimum 11.5% alcohol and be aged in bottle for a minimum of 18 months.

This well known sparkling wine style is made using the ‘Tank’ or ‘Charmat’ method, where secondary fermentation takes place in
stainless steel tanks and is then transferred to bottle - preserving the unique delicate aromas and fruit flavours of the grapes. Until recent
changes in Italian appellation law, Prosecco was the name of the grape used, but as of 2010, the variety is called ‘Glera’ and the zones
where the grape is grown are now known as ‘Prosecco’. DOCG status was awarded to the Valdobbiadene, Conegliano and Colli Asolani
zones (due to their superior quality) at the same time. Wines are made with grapes from permitted zones in Veneto and Friuli and must
be a minimum 10.5% alcohol for frizzante (lightly sparkling), 11% for spumante (fully sparkling) - they are made into ‘Dry’, ‘Extra Dry’
and ‘Brut’ (the driest) styles. We serve all of our Prosecco’s in a white wine glass - as is the tradition in the Veneto.
