Unique and inimitable. This mature Sardinian Pecorino is ripened for a minimum of 4 months and has
a cylindrical shape with a smooth, flat, firm, and light brown colored rind. The cheese is white, tending toward straw yellow,
and is compact with sparse eyes. It has a strong flavor and is pleasantly spicy.
