Si può raccontare la dolcezza di un
territorio?
Dal 1977 per noi di B.Langhe il lavoro inizia ogni giorno con questa domanda, a cui proviamo a rispondere
come se fosse la prima volta.

TUTTO HA INIZIO...
Tutto ha inizio tanto tempo prima, lontano dalle luci della ribalta, nella riservatezza di un laboratorio artigianale, dove si tramandano con le generazioni i
segreti dell’arte dolciaria. Erano gli anni Settanta e B. Langhe era un piccolo
biscottificio che si affacciava su una delle strade del centro cittadino di Alba. E
c’erano soprattutto caparbietà, tanta voglia di lavorare, creatività da vendere e
coraggio imprenditoriale che portarono il piccolo laboratorio a diventare
un’azienda solida che esporta i suoi prodotti in tutto il mondo. Lo stesso spirito
che anima quotidianamente l’impianto produttivo di B.Langhe, oggi fuori dal
centro cittadino, ma sempre ad Alba, il cuore enogastronomico delle Langhe.
IT ALL BEGINS…
It all began a long time ago, far from the bright lights, in the shelter of an artisan laboratory, where
the secrets of the art of confectionery are handed down through the generations. These were the seventies, and B. Langhe was a small biscuit manufacturer with a street-front in one of the central streets
of Alba. It was above all tanacity and the will to work, creativity and entrepreneurial courage that led
this little workshop to become a very solid company which exports its products worldwide. That same
spirit daily animates the production plant of B.Langhe, nowadays located outside the city centre but
still in Alba, the wine and food heart of the Langhe.

Our approach, following local tradition while allowing a touch of innovative influence, is what distinguishes B.Langhe’s confectionery production. On this basis, the firm has acquired all the necessary certificates to guarantee their clients authentic and reliable products in keeping with the most recent
international standards. It has obtained ISO 9001:2008 which certifies the quality of every phase of
manufacture and procurement of raw materials. Furthermore, B.Langhe is one of the companies credited
by Italcheck, a guarantee of traceability and authentication which allows the end user to identify with
certainty those products which are genuinely Made in Italy.

Se dalla nostra vista è presto fuggito il soave giullare generoso di storie, lo ritroviamo
ora docilmente asservito alla corte del sovrano in cerca di moglie. Del Re è leggendaria
l'antica passione per l'arte culinaria più raffinata di sempre. E solo sposerà colei che
saprà condividere l'amore per i suoi dolci, così le fanciulle lui mette alla prova: «Tu
scegli mia cara il lingotto che vale. Se vuoi tra le mani quello d'oro splendente lontano
da me tu puoi restare. Se invece il tesoro per te più prezioso è quello che offrono le mie
operose cucine, vieni bellezza a far da sovrana al regno e alle mie del gusto fucine».
Though the captivating jester with his tales soon disappeared from view, we find him again in docile
servitude at the court of the king who is seeking a wife. The king’s long-founded passion for the ultimate
in culinary art has become legendary. He will only marry a bride capable of sharing his love for sweet
things - so he puts the young girls to the test: “Choose, dear lady, the most valuable bar. If your desire
is to hold glittering gold in your hands, stay far away from me. If, on the other hand, what my busy kitchens offer is worth more to you, come, sweet lady, and be queen of my kingdom and these forges of
flavour.”

osa caratterizza ciò che è prezioso? Sicuramente la ricercatezza
della preparazione e il pregio delle materie prime. Il Tarocco
di B.Langhe racchiude in sè le due qualità, proponendosi
come una ricetta del tutto originale. Un impasto di cacao e
nocciole dalla consistenza unica, affidato ai movimenti di mani
sapienti e al loro indispensabile strumento, la spatola appunto denominata Tarocco. La forma esterna è quella compatta di un lingotto, la sostanza, celata
sotto una spolverata di cacao, ha una consistenza mai provata prima, gli oli ricchissimi della nocciola, che nella preparazione supera il 50%, infatti, ne fanno
un dolce sempre pronto a sciogliesi delicatamente. Un vero e proprio dolce
“da meditazione” destinato a fare scuola.

What makes something precious? Certainly the fact that it is prepared with attentive care and excellent
ingredients. The Taroccco made by B.Langhe encompasses both these qualities, combined in a recipe
that is altogether original. A paste of cocoa and hazelnuts with a unique consistency, it is mixed by the
movement of skilful hands using an indispensable tool, a spatula known as the Tarocco. The external
form of the product is a compact bar, the substance, covered with a dusting of cocoa, has an unprecedented consistency, the rich oils of the hazelnuts which exceed 50% of the preparatory ingredients,
make it a sweet which is always ready to melt delicately. This is confectionery for real “meditation”,
destined to set an example for the future.

Alla volta della "Città delle Cento Torri" adagiata lungo il Fiume Tanaro, cantava,
l'antico menestrello, di un amor cortese a lungo procrastinato tra la "Tonda Gentile",
in quelle terre così ammirata, ed il bruno signore la cui fama giungeva da lontano.
Per strade e per piazze svelava le promesse di eterna fedeltà dalla giovane pronunciate
al cospetto della luna, quando solo nei di lei occhi astrali i due si potevano incontrare.
In the direction of the “City of a Hundred Towers” stretching along the River Tanaro, the minstrel of old
would sing about courteous love, long procrastinated among the Tonda Gentile hazelnut groves of those
much admired landscapes, and the dark lord whose fame reached here from afar.
Through the streets and squares he wandered, relating tales of promises of eternal fidelity pronounced
by the damsel during some secret rendezvous, hidden from all eyes but the Moon’s.

al fortunato incontro tra il Cacao e la Nocciola Tonda Gentile
del Piemonte nascono i Tartufi dolci. I due ingredienti protagonisti della tradizione dolciaria piemontese si fondono in un
morbidissimo impasto la cui forma richiama il prezioso tubero
da cui prende il nome. E' semplice lasciarsi trasportare dal
profumo della nocciola tostata e finemente sminuzzata e scoprire così la ricchezza naturale di un territorio, dei suoi boschi e dei doni pregiati che lì si
nascondono.
Con la pazienza arcaica di moderni trifulè (cercatori di tartufi) che, secondo
la leggenda millenaria, seguono il raggio di luna per scoprire la dimora sotterranea dei pregiatissimi tuberi, da B.Langhe l'amalgama di Cacao e Nocciola
è frutto di un'attenta ricerca e tale impasto, che rende unici i suoi Tartufi
dolci, viene lasciato riposare tutto il tempo di una notte. Da sapiente mani artigiane, la mattina seguente i piccoli dolci vengono formati e tagliati uno a
uno.

From the fortuitous encounter between Cocoa and Tonda Gentile Hazelnuts from Piedmont these Truffles were born. The two main ingredients in Piedmont confectionery tradition are blended in a very soft
mixture into a shape which recalls the highly prized tuber from which it takes its name. It is easy to let
yourself be transported by the aroma of the toasted, finely chopped hazelnut and thus discover the
natural richness of the territory, its woods and the precious gifts which are born there.
With the patience of old (like that of today’s truffle-hunters who, in keeping with the ancient legend,
follow the moonlight to find underground troves of those precious tubers) in BLanghe the Cocoa and
Hazelnuts are blended according to a carefully researched method, and that paste, which makes their
Truffles unique, is left to rest for a whole night. The following morning, skilful hands shape and cut
these chocolates one by one.

Qui ogni collina è dominata dal suo castello ed in ogni maniero governa una castellana,
in attesa che il suo signore torni dalla guerra. Al cospetto della più facoltosa si presentò
il menestrello, che a lungo non può sfuggire al desìo del viaggiare. Una donna astuta,
l'opulente signora, solita a derimere gli intrighi di corte offrendo a ciascun rivale l'effluvio più adatto ad alleggerirgli il cuor. Forti liquori e deliziosi aromi, ad ogni pretendente il proprio dono a lei rimaneva il tempo di cercare l'ingrediente che la sua
vanità potesse soddisfare.
Here, every hill was dominated by its castle and each was governed by the lady of the manor when the
squire was away at war. To the wealthiest one the minstrel would introduce himself; it was not in his
nature to stay long in one place. The opulent lady of the manor, an astute woman, accustomed to
judging the intrigues of the court, offered each rival the most suitable balm to lighten his heart. Strong
liqueurs and delicious aromas, each suitor had his own gift while she had time to seek the ingredient
which would satisfy his vanity.

la sottile croccantezza dell'involucro di cioccolato fondente il
segreto più ricercato di una delle ricette emblematiche dell'arte dolciaria piemontese. Il cuore è la crema, soffice e al
tempo stesso dai sapori intensi. Ogni Cuneese racchiude il
suo carattere, il classico Rhum, la fresca
Nocciola, l'aromatico Barolo Chinato, e così via... per il palato è un gioco delizioso scoprirli tutti quanti per ritrovarsi infine in ognuno di essi.
I Cuneesi di B.Langhe li riconosci perché sono diversi l'uno dall'altro. Non
sono, infatti, meringhe di cioccolato prodotte in serie e in seguito riempite,
secondo la logica industriale. Nascono invece dalla delicata colatura del cioccolato attorno alla soffice crema, tanto da avvolgerla completamente ogni volta
con una nuova forma.

It is the thin crispness of the coating of bitter chocolate which constitutes the most refined secret of
one of the emblematic recipes of the art of confectionery in Piedmont. Its heart is a soft cream with intense flavours. Each Cuneese enfolds a character, the classic Rum, the fresh Hazelnut, the aromatic
Barolo Chinato, and so on… for the palate it is a delicious game to explore all of them and find the
character in each one of them.
The Cuneesi of B.Langhe can be recognised because one is different from another. These are not mass produced meringues of chocolate filled in an industrial process. They are made by delicately pouring the chocolate over the soft cream until it is completely coated, so that each time it has a different shape.

Di strade queste terre non sono certo avare e nemmeno di viandanti che oggi per piacere
e ieri per lavoro percorrono il saliscendi delle colline. Lungo l'antica “Magistra Langarum”, percorsa nei secoli da chi sulle coste del mare andava a mercanteggiare, giunse a
Mango, paese dall'esotico nome, un ospite d'eccezione. Sospinto dalla brezza salmastra,
lì si fermò infatti a riposare, un giovane astro avvezzo a riscaldare terre di ulivi e di
avventurosi marinai. Qui la tenerezza lo colse al cospetto delle delicate e operose alture
coltivate da donne e uomini caparbi. E qui arrestò il suo corso, felice di abbracciare
questa nuova terra da scaldare.
There is certainly no dearth of roads in this countryside and no lack of wayfarers, nowadays walking for
pleasure, in the past for work, following the rise and fall of the hills. Along the ancient “Magistra Langarum” travelled those going to trade along the coast, over the centuries, until they reached Mango,
an exceptional place of hospitality, with its exotic name. In this place a young star, accustomed to warming the earth of olive groves and adventurous sailors, was driven inland by the salty breeze, and stopped here to rest. Here this star was seized by tenderness in the view of delicate and busy hillsides
cultivated by steadfast men and women. And thus, here it terminated its course, happy to embrace a
new land to be warmed.

Like high-quality grapes, the most prized hazelnuts need soils which can offer the correct oganoleptic
qualities and the right exposure to the sun. For its spreadable creams B.Langhe has chosen the best,
those grown in the orchards of the District of Mango.
You just have to open a jar of White Cream to become aware of the real aroma of hazelnuts, toasted
to the right degree so that the subtleties of flavour are released to the full. The first spoonful is enough
to make you realise the delicate balance there is between the liquid and solid substances. Gianduja
Cream, on the other hand, takes up the tradition born of necessity among the Turin confectioners of
the Nineteenth Century, who had to substitute in their products a part of the cocoa – which had

cittadini: ogni giorno inizierà con dolcezza e trascorrerà all'insegna del buon gusto. Per
questo i biscottifici divennero laboriose fucine e galli e galline, genitori di preziosissime
uova, furono degni di scorazzare per le lustre strade cittadine. Nonché di adagiarsi su
torri e campanili da cui osservare con compiaciuta compostezza il passare dei giorni
nell'era della gaiezza.

the old custom of meagre breakfasts eaten hurriedly and each day’s programme dictated by the rhythm
of labour. The eager villagers spoke out: every day will begin with sweetness and will be spent in dedication to fine tastes. Thus the biscuit manufacturers became busy forges, and hens and cockerels, the
parents of precious eggs, were allowed to scratch around in the streets of the town. They could even
perch on towers and steeples, watching the days go by with complacent composure in that jovial age.
