per i padri cistercensi giunti dalla Provenza nel
1619. Trasformato in residenza privata nel
corso del Diciannovesimo secolo, oggi il monastero è una raffinata dimora Relais&Châteaux.

di restauro conservativo che ha preservato

San Maurizio, a place of meditation for the Cistercian monks who arrived from Provence in 1619,

nineteenth century, today the monastery is a refined

For this reason, our home is one of the few in the

Tutto inizia, come in ogni storia che si rispetti,
con una data emblematica.
1619, un gruppo di monaci cistercensi risale
l’antica Via del Sale e decide di edificare un
monastero sui resti di una cappella costruita un
secolo prima del loro arrivo. Un riparo, una
nuova terra, un luogo di lavoro, di preghiera, di
ore scandite dal rintocco delle campane, di
stagioni che si susseguono con lo stesso variare
dei cicli della terra.
La natura qui è sovrana. Nel corso dei secoli la
collina di San Maurizio è diventata un luogo
particolarmente fertile per le colture più svariate, dalla vite ai cereali antichi, dalle erbe officinali alle spezie del vicino Mediterraneo.

primi abitanti della collina; ancora oggi tutto è

It all begins, as in any self-respecting story, with a
symbolic date.
1619, a group of Cistercian monks go up the old Salt
Road and decided to build a monastery on the ruins
of a chapel built a century before their arrival.
A shelter, a new land, a place of work, of prayer, of
hours marked by the tolling of bells, of seasons which
follow the same change of the earth’s cycles.
Nature here reigns supreme. During the centuries the
hill of San Maurizio became a place particularly
fertile for more varied crops, from the vines to the
ancient cereal grains, officinal herbs and spices from
the nearby Mediterranean.
The centuries respected the clever work of first
inhabitants of the hill; today everything is still alive
and is our pride, of which we are the keepers and of
which you are the privileged recipients.
1862
I luoghi più affascinanti sono quelli che resistono al trascorrere del tempo e che vengono
reinventati mantenendo fede alle proprie
origini.
Nel 1862, il monastero viene acquistato dai
conti Incisa - famiglia nobiliare delle valli circostanti - e trasformato in dimora privata.
Ora ha inizio un secondo florilegio per San
Maurizio: il refettorio diventa un tripudio di
grottesche dipinte, di trompe l’oeil, di aneddoti
nascosti e paesaggi ai limiti della realtà.
La natura diventa ornamento e il chiostro si
trasforma così in un giardino all’italiana che
sfuma, oltre il belvedere, sull’orizzonte delle
colline del mare.
L’austerità è un ricordo addolcito dai colori
delle stoffe, dal calore degli arredi, dai camini e
da una natura più gentile.
San Maurizio diventa per la prima volta una
dimora, un’oasi di riservatezza.
The most fascinating places are those which resist
the passage of time and that are reinvented whilst
remaining faithful to their origins.
In 1862, the monastery was bought by the Incisa
Counts -a noble family of the surrounding valleysand transformed as a private house.
Now a second anthology begins for San Maurizio:
the dining hall becomes a jubilation of grotesque
paintings, trompe l'oeil, hidden anecdotes and
landscapes on the limits of reality.
Nature becomes an ornament and the cloister is
transformed in an Italian garden which fades over
the belvedere on the horizon of the hills to the sea.
Austerity is a memory softened by the colours of the
fabrics, the heat of the furnishings, from the fireplaces and by a more gentle nature.
San Maurizio becomes a home for the first time, an
oasis of privacy.
2002
Dopo quattro anni di rigoroso restauro conservativo che ha preservato al meglio il patrimonio lasciato durante i secoli precedenti, prende
vita il Relais San Maurizio.
Nel 2002 l’antico monastero e la dimora
nobiliare diventano un’unica anima sotto le
cinque stelle dell’ospitalità.
Nasce il primo Relais&Châteaux del Piemonte, un vero e proprio sodalizio tra arte
dell’accoglienza, eccellenza enogastronomica e
ricerca del benessere. Tutto questo prende
forma grazie ad un investment banker nativo
delle Langhe che, con dedizione e passione, ha
voluto restituire al territorio una preziosa
pagina di storia.
San Maurizio apre le sue porte al mondo, dopo
quattro secoli di storia e di storie, e diventa in
dieci anni il punto di riferimento per
l’ospitalità più raffinata, centro di sperimentazione culinaria e custode, allo stesso tempo,

preserved to the best the patrimony left over the
previous centuries, Relais San Maurizio comes to
life.
In 2002, the antique monastery and the noble
house become a single soul under the five-star
hospitality.
The first Relais&Châteaux of Piedmont is born, a

eno-gastronomic excellence and the search of

Le vasche ricavate nelle antiche grotte dei
Cistercensi sono la memoria di un passato
colto, che attribuiva alla salute del corpo lo
stesso valore del benessere dello spirito: un
benessere che si riattiva insieme alla circolazione sanguigna.
San Maurizio si trova lungo la Via del Sale,
antico percorso sul quale il prezioso cloruro di
sodio veniva trasportato a dorso di mulo dalla
Liguria oltre le Alpi.

knew, masters of exploiting sources of natural hot
water, having understood its healing powers.
The baths in the ancient Cistercian caves are the
memory of a knowledgeable past, which attributed
to the health of the body the same value as the

old path on which the precious sodium chloride was
transported by mule from Liguria over the Alps.

The project of Suites San Luigi has its roots in the
XVIII century past in the rural home which
dominates the monastery of San Maurizio. The
attentive opera of recuperation and restoration has
been undertaken in respect of the antiquity and its
function of the highest level of technology and
philosophy of good living. San Luigi today represents
a bond between authentic spaces and state of the art
architecture, thus safeguarding an experience suspended in time and, in the same time, prejected towards
the future.

The project San Luigi was born from a challenge:
re-unite in a unique exclusive space the designer
brands of important italian designers and the more
attentive made in Italy companies accomplished in
interior design and home furnishings.
The suites become therefore true and proper treasure
troves of craftmanship and excellence recognised for
reputation and undisputed quality. The attention to
detail is the constant principle, as it is in the home
of everyone, but with the certainty to entrust in the

Negli anni Cinquanta Guido e Lidia Alciati
inventano un nuovo modello di ristorante
dove, molto prima del fenomeno slow food,
venivano proposte materie prime genuine
ricercate personalmente tra i produttori locali.
La stessa tradizione continua al ristorante
stellato “Guido da Costigliole”, ricavato nelle
antiche cantine del monastero, dove le pareti in
pietra di Langa orginale e le volte con i mattoni
a vista originali creano un’atmosfera di grande
calore e fascino.
In estate la terrazza Monterosa, con vista sulla
cucina e sulle Langhe fino alle Alpi, rende
ancora più piacevoli i sapori della buona tavola
quando all’imbrunire il cielo sfuma sui toni
caldi del tramonto.
In the fifties Guido and Lidia Alciati invented a
new model of restaurant where, long before the
phenomenon of slow food, genuine raw materials
were proposed and personally searched for from local
farmers.
The same tradition is continuing today at the
Michelin star "Guido da Costigliole" restaurant,
situated in the ancient cellars of the monastery,
where the walls with the oringinal stone of Langa
and the ceilings in original exposed bricks create an
atmosphere of great warmth and charm.
In summer the Monterosa terrace, overlooking the
kitchen and the Langhe hills to the Alps makes the
flavours of the “buona tavola” more pleasurable
when the dusk is fading in shades of warm sunset.

dai grandi vini di Borgogna, come le verticali
Domaine della Romanée Conti, ai celebri

Rothschild, Iquem. Ci sono gli Champagne
Roederer, Selosse, Gosset e Salon; i Brunello di

Started with his father Guido, the son Andrea
continues the tradition of great wines in the cellars
of the former Cistercian monastery transformed in

Tuber Magnatum Pico, delizia del palato e
anima pulsante del Piemonte culinario più
raffinato. Il Tartufo Bianco d’Alba, creatura
delicata e capricciosa, matura quasi come un
piccolo miracolo ogni anno in autunno solo
nella nostra terra incontaminata, in simbiosi
con la flora e a determinate condizioni climatiche.
Si perde nella notte dei tempi il principio della
“biografia” del tartufo ma basta pensare alle
testimonianze che, dal Settecento, legano il suo
aroma a personaggi provenienti da tutta
Europa, ad accordi diplomatici di successo e ad
eventi di corte, per comprenderne la preziosità.
Vere e proprie battute di caccia al calare del
sole con i fedelissimi cani addestrati che fiutano il terreno fra le nebbie dei boschi.
Un aroma che è una sinfonia, a tal punto da
essere considerato dal compositore Gioacchino
Rossini “il Mozart dei funghi”.
Con la stessa fierezza è il re dei menù di San
Maurizio e di tutti gli altri Truffle Bistrot che
abbiamo inaugurato nel mondo; è il dono più
prezioso della nostra terra, delle nostre radici.

The Alba White Truffle, delicate and whimsical
creature, almost like a small miracle each year in the
autumn only in our pristine land, in harmony with
the flora and under certain climatic conditions.
Lost in the mists of time, the principle of the
"Biography" of the truffle but just think of the
testimony that, since the eighteenth century, binds
its aroma to people from all over Europe, for
successful diplomatic agreements and events of the
court, in order to understand its preciousness.
True and proper hunts in the sunset with loyally
trained dogs that sniff the ground through the mists
of the woods.
An aroma that is a symphony, to the point be
considered by the composer Gioacchino Rossini "the
Mozart of the mushrooms”.
With the same pride it is the king of the menus of
San Maurizio and of every Truffle Bistrot we
opened all over the world; is the most precious gift of
our land, of our roots.
It is no coincidence Dumas called it "the Holy
Sanctorum of the table "and not surprisingly we are

un magnifico esemplare di cedro del Libano, e
gode di uno speciale microclima che fa convivere corbezzoli e ulivi centenari, abeti, larici e
faggi maestosi insieme a querce e olmi locali.
La vegetazione lussureggiante che circonda il
monastero ha al suo interno un cuore dedicato
alla cura dell’orto officinale e dell’orto organico, preziose eredità dei monaci.

The secular park in which San Maurizio is located,
twists and turns on top of the hill, surmounted by a
magnificent example of the Cedar of Lebanon, and
enjoys a special microclimate which cohabit
strawberry and olive trees, fir, larch and majestic
beeches along with local oaks and elms.
The lush vegetation surrounding the monastery has
in its inside a heart dedicated to the cure of the
officinal herb garden and the organic vegetable
garden, a precious legacies of the monks.
These two oases of authenticity are a source of
inspiration for the eco-friendly philosophy of our food
and produce the raw materials at the base of the
recipes that you can find in our menus, detoxifying
teas and in our skin-care “green luxury” products.

catering e banqueting.
Nel White Space, che ospita fino a 120 persone, è possibile organizzare incontri sotto la
volta affrescata dell’antica chiesa del monastero, oggi adibita anche a centro espositivo per
mostre d’arte.
Per meetings fino a 60 persone è invece disponibile il nuovissimo Violet Space, ricavato
all’interno del casale settecentesco.
Per riunioni più riservate, fino a 40 persone, vi
offriamo l‘intimità del Cloister Space, un
piccolo gioiello dove sapienza e arte meditativa
favoriscono le decisioni strategiche.
Per grandi congressi e ricevimenti, fino a 800
persone, vi suggeriamo la celebre barricaia dei
fratelli Martini, realizzata da un famoso architetto, progetto avvenieristico unico nel suo
genere che si sviluppa su due livelli, il primo
dei quali ha un’estensione di oltre 2750 metri
quadrati.
San Maurizio is also synonymous with refined and
avant-garde technology for events, celebrations and
conferences of all kinds with catering and banqueting services.
In the White Space, which accommodates up to 120
people, you can organise meetings under the frescoed
ceiling of the ancient monastery church, also used as
an art exhibition centre.
